Rico has been in the grouper farming business for many years and the restaurant selects groupers weighing between 20-30kg which have been specially reared and organically cultivated for 3 years without any man-made fish feed. The entire grouper's body is valuable, especially its skin, head and sides containing a rich source of collagen which are not only beauty enhancing but high nutritive value.
